This taco soup gives you all the flavor of a taco in a quick and easy soup. Organic ground turkey, tri-colored beans and warming spices all come together to make a filling meal that only takes around 30 minutes to make. This delicious taco soup is perfect to meal prep for an easy lunch throughout the week or fast weeknight dinner. This soup is naturally gluten-free. It’s a hearty meal the entire family will love.
This recipe is compliments from one of my very best friends, Kelly Miller. We’ve been friends for 29 years. Kelly is a mother of eight children and had to learn to cook healthy food for a large family. Some of my favorite memories are sitting in her kitchen eating with her family.
Quick Taco Soup
Sauté in a pot the first three ingredients: 2 pounds ground turkey (Trader Joe’s best price and organic); 1 diced jalapeño; 1 diced tomato.
Add and simmer: 3/4 packet of Trader Joe’s taco seasoning; 6 cups of chicken broth (Better Than bouillon is the best — no MSG, but it’s a base so you’ll have to add the water to reconstitute); 3 -4 cans of tri-colored beans, drained (Trader Joe’s organic and best priced); 1 can Mexican stewed tomatoes.
Add 1 cup jasmine rice, cooked.
Garnish with fresh made tortillas chips (my family’s favorite is Doritos), shredded Mexican cheese, limes, avocados and sour cream.
It is simple and quick — I’m talking 30 minutes of simmering and you’re done!
