Well, it’s that time of the year again, the time to reset, start new goals and strive to be a little better than we were the year before.

This looks different for everyone, although most of us inevitably have the hopes of shedding those few extra holiday pounds somewhere on our New Year's resolution lists, but what else are we adding to our resolutions this upcoming year? What are the things that are most important to us going into 2022?

For me it’s simply focusing more on love and kindness. If there’s anything 2020 and 2021 have shown me it’s how easily we were able to be segregated into groups — us vs. them — carrying anger, hostility and blame for our current situation. The kicker is, we all want the same thing, peace and happiness.

But how do we achieve peace and happiness when the world feels so divided; when everyone seems to have a difference of opinion on how to attain this collective goal? There is one way that will always be the right way, and that is through the simple act of love and kindness.

We have all had a difficult time navigating the past two years, some of us harder than others, so going into 2022 it’s important to remember that we are not alone. Everyone we meet is dealing with their own tribulations, and that the simple act of kindness can go a very long way.

Kindness is simply defined as being friendly, generous and considerate. All of these things cost absolutely nothing but can mean everything to those in need of it, and we are certainly all in need of it. So my personal resolution for 2022, aside from shedding those extra holiday pounds, is to be friendlier, more generous with my time and more considerate to all around me. This includes sharing more meals with friends and neighbors because nothing seems to unite people more than sharing a great meal together. Just imagine what this world could look like if we all started being a little kinder to one another.

Eating more veggies in 2022 is never a bad idea either, so here is a recipe for my instantly popular Beer Battered Fried Asparagus with Garlic Aioli. These are certain to put a smile on just about anyone’s face.

Fried Asparagus

Ingredients:

1 cup Krusteaz tempura mix

1 cup Rogue Colossal Claude beer

1/2 teaspoon garlic powder

1/2 teaspoon pepper

Oil for frying

Directions:

Preheat oil to 375 degrees

Mix all ingredients in a bowl, dip asparagus to coat evenly and deep fry until golden brown. Approximately 1 minute per side.

Garlic Aioli

Ingredients:

3 garlic cloves

1/2 teaspoon coarse sea salt

1/2 cup mayo

1 tablespoon fresh squeezed lemon juice

2 tablespoons olive oil

1/2 teaspoon Worcestershire sauce

Directions:

With a mortar and pestle, smash garlic with coarse sea salt until mixed into a smooth paste.

In a small mixing bowl, add mayo, lemon juice, olive oil, Worcestershire and garlic mixture.

With a hand mixer, mix for approximately one minute.
